She's back, and she has a Vitamix!

Ok. Admittedly blogging didn't get off to the greatest start. I did a grand total of 2 posts... and that was about 5 months ago. Well I am back again...

So the slim fast... it just felt wrong so i stopped that, but with a sugar free January and healthy eating i have shed nearly 10lb in the last 5 months.  But now I must do better. Target is 10lb in 1 month.  18yr old self - you are in sight!

Me, my vitamix and Jillian Michaels are going to make it happen.

Yes you heard me right. My Vitamix.  I bought myself a 'happy go back to work' present and it was worth every penny!! I have some amazing recipes to share so watch this space.



Ok. I can't leaving you waiting. Here's one.

Pear and Cashew Breakfast Smoothie

1 ripe pear
10 cashew nuts (unsalted)
2 tablespoons of oats
3/4 cup of soya milk (or any other milk)
a couple ice cubes if you want it cold

put it in your Vitamix and blend on high for a minute.

Enjoy. Creamy, thick, filling and full of goodness.

Time to Get Skinny!

My little Mr K. is 9 months old now and mummy is still carrying some extra pounds. After months of trying to slim down by 'eating healthy' i realised it was not working and I was having too many 'diet starts tomorrow' days.  So I took some drastic action and got me some Slim Fast. (Not sponsored! - Just being truthful!) My target weight is that of my 18 year old self when people used to say of me 'She shouldn't be working in ASDA, she should be a model'. (Ok it was one person who said that, but I hang on to it!).

So I started last week with the Slimfast 3-2-1 programme. A milkshake for breakfast and lunch, 3x 100cal snacks, and 1x 600cal dinner. So far so good! After a week i have lost 1.5lb. Which is great for me considering I have been stalemate for a good 4 months! Happy Dance! 

I have also managed to get off my butt and do some exercise. Admittedly it is in my pajamas in front the TV (Fitness TV is great!) with Little Mr K. in his high chair watching me with concern. But never-the-less, it is some hard core exercise and me likey! Fitness TV have loads of different workouts so I am trying everything... bit of Gillian Michaels Ripped in 30. That woman is mean!  Today was Taebo Express  - I nearly died! Sorry but you will not get me doing Cheerobics! Seriously people!

Man V. Food Veggie Style!

So, it's my birthday and I have decided to blog this year. Why? Because sometimes you just got to share your world with strangers!

I got a couple of friends and family round and served up a special meal.

We started with build your own summer rolls (rocket, coriander, Thai sweet basil, onion, cucumber) all wrapped in rice paper sheets and dipped in sweet chilli sauce with lime. Sweet!

The main course was an ode to Man v. Food which I am a massive fan of. Being veggie though I had to get creative.

I built an epic burger containing the following:

  • Ciabatta bread
  • Homemade Coriander salsa
  • Homemade Oat burger
  • Fried egg
  • Homemade Chilli sauce
  • Bread
  • Burger
  • Garlic mayo
  • Lettuce
  • Tomato
  • Coriander salsa
  • Avocado
  • Burger
  • Chilli sauce
  • Grilled pineapple
  • Bread
  • Chilli sauce
Served with a side of sweet potato fries and normal fries. 
I had never done this before so wasn't sure how it would taste, but it went down a treat. Everyone loved it, and it tasted great if I do say so myself. (Though I'd avoid getting the egg and pineapple in the same mouthful!). Leave out the egg and have it vegan. If you're interested I'll post more details on the recipe.



Man V. Food Style Vegetarian Burger

I finished it up with some tofu chocolate mousse. What?!! Honestly, it was beautiful. Very rich and chocolately. You'd never guess it was tofu.
